These Peanut Butter Cookie Dough Bites are a delightful no-bake snack that combines the rich flavors of peanut butter and cream cheese with the crunch of granola. Perfect for satisfying your sweet tooth without the guilt, these bites are packed with protein and healthy fats, making them an ideal treat for any time of day.
NuTrail Granola is the perfect way to elevate this decadent edible cookie dough because it offers a sweet, nutty flavor and subtle crunch that complements the other ingredients. The nut-based granola takes the place of flour in these bites and ties all the ingredients together while adding a dose of healthy fats and protein from the nuts that will keep you satisfied. This recipe uses our Cinnamon Pecan Granola, but feel free to customize it with your favorite flavors.
Ingredients
1 cup Cinnamon Pecan Granola
1 cup no sugar added peanut butter
2 ounces cream cheese
1/2 cup sugar free/low carb chocolate chips
Directions
Place the granola into a blender or food processor and process for 20-30 seconds until mostly broken down. The granola should resemble sand. If you prefer chunky bites, feel free to leave it in larger pieces.
In a medium mixing bowl, mix together the peanut butter and cream cheese until well combined and smooth. Then fold-in the finely ground granola. Mix until well combined and a thick smooth dough forms.
Fold in the chocolate chips. Use a tablespoon to measure out 1 heaping tablespoon portions and roll into a ball. Chill for 30 minutes and serve.
